My Banana Porridge may seem simple, but it's for those times when you're craving something on the plainer side. The only flavour enhancer to compliment the oats is banana with a dollop of nut butter on top. Below I've suggested my Cinnamon Almond Butter, but if you're really looking to strip it back, then 100% almond, peanut or cashew butter is also perfect. This recipe is designed to nourish. Enjoy! 1/2 cup rolled oats 3/4 cup boiling water 1/2 ripe banana, sliced 1/2 cup dairy free mylk of choice Pinch of salt Toppings 1/2 ripe banana, sliced 1 generous dollop of my Cinnamon Almond Butter or 100% nut butter of choice Method In a small saucepan add the oats and boiling water (off heat). Allow the oats to absorb the liquid for a few minutes, before stirring through the banana slices and mylk. Turn stove to a low- medium heat - gently cook - stirring throughout. Cook the oats until hot and at your desired consistency - I like mine on the thicker side. Serve the porridge in a bowl and top with remaining banana slices and nut butter of choice.
