The afternoon was drawing to a close and I was in a baking mood so I decided to scroll my Pinterest Pins for some inspiration. I came across this simple recipe by Sarah from the Vanilla Bean Blog… When I first tasted this I thought I was eating Peanut Butter Brittle with the added bonus of Dark Chocolate. For me it is quite an indulgent breakfast option so I have found myself enjoying it after dinner with milk. I think this easy recipe will defiantly become a staple in my pantry. Truly Delicious!

Preheat the oven to 160° fan forced.
Combine in a large bowl oats, brown sugar and salt.
In a separate bowl combine maple syrup, peanut butter, oil, water and vanilla extract until smooth and glossy.
Add wet ingredients to dry and sir until everything is coasted.
Transfer to a lined baking tray and bake until oats are golden brown and are no longer wet about 15- 20mins. (make sure you stir often to ensure even baking.)
Allow to completely cool before adding the toasted almonds, cacao nibs and dark chocolate.
Serve with your choice of milk or yoghurt.
