Recently when it comes to recipe testing I tend to have key elements that I think of, one these being appearance.
Yes, how the ingredients gel on the plate is equally as important as the overall taste. If something looks appealing, then we want to eat it and this leads us into consuming more of these types of foods.
So my approach to plant-based cooking is creating dishes that taste and look delicious, so we begin to make healthier mindful decisions when eating.
I shared my 'Sweet Potato Fries with Almond Feta' on Instagram and you lovely people went totally crazy for it, so I thought it deserved to be shared on the blog.
This simple 5 ingredient recipe is the perfect example of how plant-based food doesn't have to be complicated to be balanced and nutritious. With only two ingredients, sweet potato and almonds you have the essential 3- carbohydrates, healthy fats and protein!
My Sweet Potato Coins with Almond 'Feta' is wonderful snack, light lunch or pre-performance meal option.

1 medium/ large sweet potato
1/3 cup almond meal
juice of 1/2 lemon
salt & pepper to taste
Cress for garnish (optional)
Pre-heat oven to 180°C fan and line a baking tray with baking paper.
Wash and slice sweet potato into 1cm thick coins.
Spread over tray and bake for 30- 40min until soft and golden.
Meanwhile prepare almond 'feta' by combining almond meal, lemon juice and salt & pepper in a small bowl.
Allow to chill in the fridge, so lemon juice absorbs and the 'feta' slightly dries out.
Place sweet potato coins on a plate and crumble over feta.
Garnish with cress (if using) and serve.
