In a small saucepan add rice, quinoa and water.
Bring to the boil.
Reduce heat and cover until liquid is absorbed.
Set aside to cool.
In a large dish fill with 1cm of water.
Place 1 rice paper sheet in water for 10 secs.
Remove from water and place sheet on large plate.
Add the toppings and roll.
