A lot of people shy away from salads during the colder months because of the obvious post chilling effects, but here I have a recipe that will make you rethink and maybe question the 'salad' definition.
My 'Warming Winter Salad' doesn't involve your lettuce leaves and cucumber slices, but a rich combination of chickpeas and seasonal vegetables that are roasted, sautéed, spiced and seasoned to create a warming, yet light dish.

~ Dinner Version ~
1 cup quinoa
3 large handfuls of spinach
In a medium saucepan add quinoa with 2 cups of water. Bring to the boil, cover and reduce heat to low and cook for 20mins or until liquid has absorbed.
Serve Warming Winter Salad and evenly distribute quinoa and spinach.
Again serve with lemon wedges and a generous drizzle of tahini.
