Chia Cookies

I first had these cookies at an after party for a ballet season and I just couldn't stop at one. I asked my gorgeous and very talented ballet friend if I could have the recipe… and here it is!
What I love about these cookies is that they are so moorish and just seem to melt in your mouth. They do have a slight crunch from the chia seeds, which I think makes this cookie so unique. 

Chia-
 I am sure that most if not all of you have heard of Chia. They are tiny seeds that can come in either white, brown or black. Despite having little if not no flavour they sure do contain the benefits, hence being called a superfood.

  • High in fiber
  • Omega-3 fatty acids, which regulate mood, improves sleep, promotes healthy weight
  • Magnesium 
  • Protein.

C H I A  C O O K I E S -
Ingredients:
  • 100g almonds
  • 60g coconut sugar
  • 150g spelt flour
  • 100g coconut oil
  • 3 tbs chia seeds
  • 2 tsp vanilla extract
Method:
Pre-heat the oven to 180°C, fan forced and line a slice try with baking paper.
In a processer process almonds and coconut sugar until a flour.
Add remaining ingredients and process until a dough is formed.
Roll 1- 2 tbs of dough into balls and slightly flatten.
Bake cookies for 15- 20 mins until golden brown.
Allow to cool before devouring.
Makes 12 Cookies.
