These magic 'Vanilla Oat Balls' have become a regular feature within my diet, for the times when I'm feeling peckish. Whether its morning and I'm waiting for my breakfast to cook, or I just need a pick-me-up, these balls of oaty goodness are perfect. This recipe is also super easy to make, combining only five ingredients! To make the balls it takes about 10 minutes to blitz the ingredients and roll balls, before storing them in the fridge for a week long of "hunger preventing moments." 1 ½ cups rolled oats 2 tbsp desiccated coconut ½ tsp vanilla powder or extract 12 soft dates, pitted 6 tbsp water Method In a food processor add oats, coconut and blend until a meal. Add other remaining ingredients and process until a dough consistency is formed. Roll dough into evenly sized balls, about a tablespoon. Store in an airtight container in the fridge for up to a week.
