I can't believe that this is the first time I have made porridge bars!... It would seem only natural that I would love them as porridge is my favourite food and in my opinion a food group in itself. (Who's with me!) Anyway I was inspired to give this recipe a go when I saw Donal Skehan's youtube recipe for Baked Oatmeal with one of my favourite youtube bloggers Melanie Murphy. I swapped and changed a few ingredients to make them vegan and to my liking. This recipe is super easy to whip together and is a perfect for mid morning/ afternoon snacks. Love Alex, Ballerina Bites. xx Ingredients 100g rolled oats 30g sultanas 1 ½ tbsp chia seeds 1 ½ tbsp pumpkin seeds 1 ½ tbsp sesame seeds 1/2 tsp cinnamon 1/2 tsp cardamon 1/2 tsp baking powder pinch of salt 200ml almond milk 1 banana, mashed 3 tbsp maple syrup 1 ½ tbsp almond butter Method
Pre-heat to 180° convention heat. In a large bowl combine all dry ingredients. Whisk together wet ingredients in a jug until smooth and add to dry ingredients. Give everything a good stir before pouring into a lined square brownie tray. Bake for 20mins or until knife is clean when inserted. Allow to cool before cutting into bars. Makes 6 bars.
