I can't believe that this is the first time I have made porridge bars!... It would seem only natural that I would love them as porridge is my favourite food and in my opinion a food group in itself. (Who's with me!)
Anyway I was inspired to give this recipe a go when I saw Donal Skehan's youtube recipe for Baked Oatmeal with one of my favourite youtube bloggers Melanie Murphy. I swapped and changed a few ingredients to make them vegan and to my liking.
This recipe is super easy to whip together and is a perfect for mid morning/ afternoon snacks.
