Sticky Date Porridge

It’s that time of year where Winter is well underway and Christmas festivities begin to sing. The smell of spices and chocolate waft through the air, and comforts are found through food, while surrounded with loved ones.
~ 
‘Sticky Date Porridge’, a delicious seasonal breakfast that will line your core and wonderfully fuel your Christmas cheer.

Ingredients
A large handful of pecans
½ cup rolled oats
½ cup milk of choice
2 medjool dates, pits removed & chopped into small pieces
½ tsp maca powder (optional)
¼ tsp cinnamon
Pinch of nutmeg
Pinch of salt
½ tbsp maple syrup
 
Method
Pre-heat oven to 160°C fan.
Scatter pecans over a tray and roast for 7mins or until golden.
Once toasted, allow pecans to cool before roughly chopping.
 
Meanwhile in a small saucepan add oats and cover with ½ cup of boiling water.
Allow oats to soak, off heat, until liquid is absorbed.
Add milk, half the dates & pecans, maca powder, cinnamon, nutmeg and salt.
Allow porridge to cook (stirring throughout) on medium-low heat until thickened or desired consistency.
 
Once porridge is ready, pour into a bowl and top with remaining dates and pecans.
 Drizzle over maple syrup and serve.

I either use Form Nutrition (Super Blend) or Vega One (Coconut & Almond.
